As promised, here is my recipe for Spanish Meatballs. I made these for Rob’s party and they went down a treat! I doubled this recipe to make enough for 25+ people.
400g minced chicken
100g minced bacon
1 onion, finely chopped
1 clove garlic, crushed
3 desertspoons soy sauce
1 tsp oregano
1T pine nuts
2 desertspoons breadcrumbs
Mix all ingredients together. Shape into balls the size of a large marble. Coat in flour. Either pan fry or bake in a moderate oven (I baked mine). Set aside.
SAUCE
1 onion, finely chopped
1 clove garlic, crushed
olive oil
2T fresh parsley, chopped
salt & pepper
2 tomatoes, chopped
1 small glass white wine
1/2 chicken stock cube, dissolved in 1/2 cup water
2T tomato puree
bay leaf
Fry onion and garlic with olive oil, parsley, salt & pepper. Add chopped tomatoes, wine, stock, tomato puree and bay leaf.
Simmer for 30 minutes.
Add meatballs and cook to heat through.
